Diners love dishes like the prawn risotto with sauce Américaine that has been on the menu since opening in 2004, gently reworked. Consider his outstanding onion tart with truffled Brie, date, sesame and pumpkin seed pesto. Loud applause will be given for Michael’s roulade of quinoa and aubergine with grapes, mushrooms, parsley butter and smoked ale, while carnivores will clap for the beef fillet and the seared loin of Springbok. Desserts are delectable – expect interesting ingredient combinations and pretty presentation.
Here the seasons evolve on the menu. In winter his love of braising root vegetables with meat, stock and aromatics is evident, in spring you’ll see verdant greens, in summer artichokes and in autumn chestnuts. His techniques are decidedly French with simplicity, never overcrowding plates with “A thousand dots of nothingness, but rather with fresh, identifiable garnishes.” Michael believes that less is more, and cooks simple, creative fare with restraint. A voracious reader and happy traveller, he returns from abroad with a head full of new ideas and inspiration.
