At Tokara Restaurant in Stellenbosch there is a young chef who is embracing the opportunity of defining her talent and fine-tuning her craft. Her skill is obvious, demonstrated on every plate; her heritage forged with heirloom recipes from her mother and grandmother. ‘Plaaskos’ that evokes memories and nostalgia are her trademark. Her cuisine is robust, indigenous and admirable. Dishes are delicate in plating, generous in flavour and size. If she is asked to describe her style, “You take a little piece of everyone, all the chefs you have worked with, to shape yourself. Some inspire, some show you what you don’t want to be, but everyone has shaped me.”
