Urbanologi is a vibey, urban space in a state-of-the-art craft brewery in downtown Jo’burg where the industrial setting provides the backdrop for exceptional cuisine.
Don’t expect traditional tapas – Urbanologi is more about small ‘Asian fusion’ plates. Chef Jack Coetzee is a wizard at combining ingredients for maximum impact. Although he’s always loved cooking and trained as a chef, Jack says his eyes were really opened when he worked with Luke Dale Roberts at The Test Kitchen. His creativity is evident on his multi-pronged menu – offering raw, cured, steamed, fried, or wood-fired Kushiyaki. The idea is to keep it simple but source incredible ingredients.
It’s recommended that two people share five plates, but you’ll want to taste them all. Jack’s favourite technique is cooking on coals – coal-fired broccoli with smoked Gorgonzola, or spider steak with passion fruit, labneh and sunflower shoots. Other highlights include poached sweet potato with a goat’s cheese yoghurt mousse, steamed brioche with smoked chicken fat and dukkha spice and yakatori chicken with chimichurri. Finish with a veggie-inspired dessert like butternut semifreddo with pancetta honeycomb and poached apple.
Jack’s passionate about finding ingredients that aren’t perfect or desirable because they force him out of his comfort zone. Taste leek roots that were being tossed by the farmer, served tempura. On the drinks menu – beer, freshly brewed – and a small selection of wines served in carafes or a bottle.
