A big drawcard for this boutique hotel is its location in a stately old home in Rosebank, close to the Gautrain and the shopping hub. Named after the owner’s favourite Champagne, Veuve Clicquot, Clico launched in 2015. It’s known for a gastronomic tasting menu with expertly paired wines – including some unusual boutique wines.

Stepping into the restaurant is like being welcomed into someone’s home. It’s modern and small – only 11 tables and one sitting per night – so be prepared to be treated like an honoured guest. The six-course seasonal tasting menu reflects head chef Marnus Scholly’s prowess and innovative flair in the kitchen. His first love is pastry, seen in his precision and detail when it comes to ingredients and flavour.

Marnus achieved head chef status at age 25 as a result of his dedication to constant refinement. What he wants to shine through on the plate is balance, leaning towards the classics. He’s currently playing with fermentation and finding alternatives to dairy – like coconut milk to add creaminess in his butternut gnocchi starter (with roasted mushrooms, spinach and Parmesan). There’s an element of ‘healthiness’ on the plate, with lots of seeds to add depth and crunch. A highlight on the tasting menu is the vibrant beetroot-cured salmon gravlax – beautifully plated with savoury muesli, basil and cream cheese.

Not only is he a fan of design and art, Marnus is constantly inspired by his food heroes:  Raymond Blanc, Marco Pierre White, Michel Roux Jnr, Daniel Humm and Bo Bech. At home Marnus conjures up inventive baby food for his first born – hake poached in milk and stewed lamb are favourites!
