The Marine Hotel, part of the Liz McGrath Collection, offers the same serenity and ambience as sister hotels The Cellars Hohenhort and The Plettenberg. At Origins Restaurant chef Tronette Dippenaar taps into origins. “Guests need to know what they are eating. We are so blessed to have everything we want on our doorstep – fresh fish from the harbour, vegetables from neighbouring farms, meat from the local butcher. Speciality products are sourced from Cape Town, but no further than that.” A farm girl from Robertson, Tronette grew up eating meat (Karoo lamb), rice and potatoes.

A spectrum of traditional South African fare includes pickled fish with red cabbage and celery slaw, coriander mayo with a hot-cross-bun melba toast and Cape Malay spiced mussels with green tomato pickle. It’s global too – the Walker Bay fish curry with Thai spices and coconut will transport your taste buds from the Cape to the East, with aplomb. South Atlantic tuna tartare with sesame and pickled kohlrabi and the passion-fruit sago, dark-chocolate-sponge cake with chocolate cremaux and a passion-fruit sherbet show her talents.

“Peter Tempelhoff, our group chef who oversees The Collection, is an encyclopedia of knowledge and always willing to share. I obviously like to cook, but especially with my husband. We love Asian and Cape Malay cuisine,” says Tronette. She has a team approach in her kitchen, and her inspiration comes from her staff, with whom she is constantly learning.

The open kitchen at Origins gives guests not only fabulous food, but also the chance to watch the happy team. Tronette’s reward? Watching waiters and the delight on guests’ faces.
