The Oyster Box Hotel is not only iconic for its Indian Ocean setting and red-and-white lighthouse, but for its Grill Room restaurant that has stood the test of time. Kevin’s ethos regarding provenance and produce is quality over quantity, and he uses local, sustainable produce above all, supporting small and emerging businesses. In winter you will see how he loves Granny Smith apples and pineapples, in summer asparagus and artichokes. Aubergines and Brussel sprouts are a favourite in autumn, in spring beetroot and apricots. Kevin travels extensively, locally and internationally, continuously seeking new trends and ideas that he can make unique to The Oyster Box. When in a new location he chats to locals and persuades them to share their signature dishes. His inspiration comes from the thrill of finding new and exciting tastes to transport onto his menu.
