If it’s sophisticated cuisine with a balance between indigenous and international, Azure will fit the bill. The Twelve Apostles Hotel captures exceptional Atlantic Ocean views, and chef Christo Pretorius makes the most of the setting and local supply. On a perfect summer evening dine al fresco or enjoy comfy leather armchairs and crisp white table linen indoors, with dramatic touches of blue. From fresh oysters to ‘tea by the sea’, Christo and his kitchen brigade aim to ensure that guests always leave with indelible memories.
Seafood, responsibly sourced, is a speciality on the á la carte menu, and on two of the three tasting menus ‘chef Christo’s’ and ‘taste of the sea’. The third is a popular vegan menu, ‘taste of the earth’.
The risotto with grilled calamari showcases Christo’s flair and personality. He claims, “I cannot live or cook without garlic, sea salt and butter”, and loves a braai. “There’s nothing more down to earth and back to our primal age when we cooked on an open fire. The heat, the smoke and flavour from a fire is something unique.” Christo, who is married to a chef, travels annually seeking new inspiration, and to make his own memories around food. His food philosophy revolves around nostalgia and memories, inspired by what he has seen, tasted and remembered from his childhood.
“Food experiences draw on all the senses; that is what I love about food.” Chef Christo Pretorius
