It was at my first dinner at Restaurant Mosaic that I was convinced that SA could hold its own on the international culinary stage. Chantel and Restaurant Mosaic have won numerous awards, and they remain a stellar beacon for anyone entering the industry. Her dishes are inventive, inspired by her surrounds and nature, she pushes the boundaries yet always exudes finesse. Her vivacious presence, tableside service, often in white gloves, shows her dedication to the diner. Her drive is not for awards and accolades, but to provide the ultimate experience for a discerning diner.
From the inception of the JHP Gourmet Guide™ and the Plate Rating, Chantel has set the bar. For a Plate Rating, restaurants are benchmarked against globally iconic establishments. In the inaugural 2016/17 guide Restaurant Mosaic was awarded two plates (restaurants are never given three plates in their first year). Three plates is the ultimate recognition for ongoing excellence in the restaurant industry in South Africa, for destination dining worthy of a flight. This year she was also recognized as part of the crème de la crème – for having three plates for three consecutive years, from 2018 to 2020.
