ALTERNATARIAN COOKING DEMO
It was an exciting moment when a group of gourmets gathered to be inspired by alternative options in our Alternatarian cooking demo. Our Alternatarians (hope you like my made-up word!) arrived ready to learn, also overflowing with good ideas that we swopped during the morning of cooking. Together we created delicious dishes that ranged from bread to bobotie, beetroot pesto to a decadent chocolate tart, before opening the wine and enjoying a leisurely lunch on the deck to the sounds of the sea. Many tips and techniques were shared, with much laughter and learning.
Neologism. … A neologism (from Greek νέο- néo-, ‘new’ and λόγος lógos, ‘speech, utterance’) is a relatively recent or isolated term, word, or phrase that may be in the process of entering common use, but that has not yet been fully accepted into mainstream language.
The idea for Alternatarian cooking started with testing recipes for a family holiday, knowing that we would have a gluten-free-please girlfriend with one son, and a vegetarian with the other. Some sumptuous meals followed that convinced my carnivores to embrace meat-free meals. I started to look at vegetables differently. Beetroot is a good example, when baking I put some beets in foil at the bottom of the oven, with lots of fresh herbs, and at the end I simply peel them (in gloves!) and make a salad. The stalks are delicious – tart and salty, can be used to their full advantage in dishes like a Thai noodle salad. The leaves, well washed, are an excellent base for a tasty pesto. If you have someone with a nut allergy, simply use sunflower seeds instead of nuts in your pesto. The alternatives are endless!
KitchenAid made the crafting easy – using their powerful food processor making breadcrumbs, pesto, grating cheese and courgettes was easy. Quality bakeware, stoneware mixing jugs and small accessories like the spatula, whisk, tin opener and vegetable peeler also ensured that the morning was seamless and stylish.
